The home enthusiast can also use some of these tips but they are mainly for the catering professional. Catering is time consuming but can also be very rewarding particularly if you love cooking. It can also be very profitable if you are smart and have a head for business.
You need to determine what type of catering you want your company to focus on. Many times this will change as your company grows, as beginning caterers do not have the staff and resources to cater very large events. There are a few types of catering you can choose from, corporate catering, school catering, event catering, and home based catering. After you have built up your business then you may want to start to take on some larger events.
The most important part for any catering is to have an immaculately clean area to prep food. This area and equipment should be spotlessly clean at all times. The food you prepare must be of the bets quality and prepared in a clean area as possible or you will have problems with health inspectors. As a caterer you will need to have all the necessary permits, authentications and certifications before you commence on your first job.
All of your meals and food will be planned around the budget so you need to always keep the price in mind. Many caterers will make up sample menus for a few different price ranges. Buffets a re very popular, as it tends to be less expensive then traditional sit down dinners. Buffets are also good for the caterer as you do not have to plate the food out and you do not need as large of a serving staff. You can serve both hot and cold dishes in a buffet.
Cocktail receptions are also great catering events as cocktail receptions can occur at any time of the day and provide munchies or be a substitute for a main meal. Hors d’oeuvres and appetizers are very elegant and you can serve many different combinations to provide a lot of variety. Whenever you cater an event you need to be very clear with the customer about your duties. Will you just be delivering the food or also involved in planning? Make sure everything is understood well before hand. You should try to plan everything out as far as possible in advance to hopefully prevent any mishaps.
